Caramel is the flavour people assume you can't do without sugar. We disagree. Our Caramel Cake is a rich, buttery, unapologetically indulgent cake with no added sugar anywhere in it — and it tastes like it has no business being on this list.

We've applied the same techniques and understanding of flavour that earned us Gold, Silver, and Bronze at the 2026 BAA Victorian Baking Show — competing against every bakery in Victoria, for the third consecutive year. This one converts sceptics.

About This Cake

A vanilla almond sponge with a soft, moist crumb, layered and finished with caramel and topped with caramel chews. The almond meal gives the sponge its texture and subtle nuttiness; the vanilla keeps it warm and rounded rather than sweet for the sake of it. Every element is considered — nothing is there by accident.

Important Information Before You Order

This cake is sweetened with xylitol instead of sugar. Please read the following carefully:

• Best enjoyed one slice at a time. Xylitol can have a laxative effect in larger servings, and the caramel chews contain prebiotic fibre which works similarly. We recommend one slice per person to start with.
• Keep away from pets. Xylitol is highly toxic to dogs and can be fatal even in small amounts. Please store, serve, and dispose of this cake securely, well away from animals.
• Contains almonds. Almond meal is a key ingredient. Not suitable for anyone with a nut allergy.
• Gluten friendly, not gluten free. We use gluten-free self-raising flour, but we bake in a kitchen that also handles wheat. We can't guarantee this cake is free from traces of gluten, so it isn't suitable for coeliacs.
• Check with your healthcare provider if you have specific dietary requirements or sensitivities.

Is this cake sugar-free?

We describe it as no added sugar rather than sugar-free, and we think that honesty matters. No sugar is added at any stage — the sponge is sweetened with xylitol and the caramel chews with chicory root fibre and stevia leaf. The small amount of naturally occurring sugar it contains comes from the almond meal. Plenty of cakes labelled "sugar-free" are in exactly the same position; we'd simply rather tell you.

Is it gluten free?

We call this cake gluten friendly rather than gluten free. It's made with gluten-free self-raising flour and almond meal — no wheat flour in the recipe. But we bake in a kitchen that also handles wheat, so we can't guarantee it's free from traces of gluten. If you're coeliac or highly sensitive, please get in touch before ordering and we'll talk through your requirements honestly.

Does it contain nuts?

Yes — almond meal is a key ingredient. Not suitable for anyone with a nut allergy.
